Brown Butter Salted Caramel Cookies
Brown butter snickerdoodles with a caramel surprise inside!
ingredients:
2 1/2 cups all-purpose Gold Medal flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1/2 teaspoon ground cinnamon
1/2 teaspoon sea salt
1 cup unsalted butter, sliced
1 1/4 cup dark brown sugar
1/2 cup granulated sugar
1 large egg
1 egg yolk
1 tablespoon vanilla extract
1 tablespoon plain Greek yogurt
1 cup caramel squares, cut into 1/4'sFor Rolling the Cookies:
1/4 cup granulated sugar
2 teaspoons ground cinnamonSea salt, for sprinkling on top of cookies
directions:
1. In a medium bowl, Whisk together the flour, baking soda, cream of tartar, cinnamon, and salt. Set aside.
2. To brown the butter, heat a thick-bottomed skillet on medium heat. Add the sliced butter, whisking frequently. Continue to cook the butter until melted. The butter will start to foam and browned specks will begin to form at the bottom of the pan. The butter should have a nutty aroma. Watch the butter carefully because it can go from brown to burnt quickly. Remove butter from the heat and let cool to room temperature.
3. In the bowl of a stand mixer, combine the brown butter and sugars. Mix until blended and smooth. Beat in the egg, yolk, vanilla, and yogurt and mix until combined. Slowly add in the dry ingredients and mix until just combined.
4. Form the dough in a ball and cover with plastic wrap. Chill in the refrigerator for at least 30 minutes. You can chill the dough overnight.
5. When ready to bake, preheat the oven to 350 degrees F. Measure about 2 tablespoons of dough and roll into balls. Flatten the ball with the palm of your hand and place a piece of caramel in the center of the dough. Wrap the cookie dough around the caramel, making sure the caramel is completely covered with dough.
6. In a small bowl, combine the cinnamon and sugar. Roll the balls in the cinnamon-sugar mixture. Place dough balls on a large baking sheet that has been lined with a Silpat baking mat or parchment paper. Make sure the cookies are about 2 inches apart. Sprinkle the cookie tops with sea salt.
7. Bake the cookies 8-10 minutes or until the edges of the cookies begin to turn golden brown. The centers will still be soft. Cool the cookies on the baking sheet for 2-3 minutes, or until set. Transfer cookies to a wire cooling rack and cool completely.

Gluten free, vegan peppermint chocolate cookies
- COOKIES
- 5 tablespoons coconut oil
- 100g vegan chocolate, chopped
- ¼ teaspoon pure vanilla extract
- ½ teaspoon pure peppermint extract
- ¾ cup (105g) high-quality all-purpose gluten-free flour
- ¼ teaspoon xanthan gum (omit if your blend already contains it)
- ½ cup (40g) unsweetened natural cocoa powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ cup (100g) sugar (take or leave)
- GLAZE
- 200g vegan chocolate, chopped
- pure peppermint extract, to taste
- Preheat your oven to 170 degrees. Line tins with baking paper, and set them aside.
- In a medium-size microwave-safe bowl, place the coconut oil and all of the chocolate except for 3 to 4 1½-inch-size chunks. Microwave 30 seconds at a time, stirring in between, until melted and smooth. Add the reserved chunks of chocolate, and stir until the chocolate has begun to thicken a bit and the chunks have melted. Add the vanilla extract and peppermint extract, and stir to combine. Set the chocolate aside.
- In a large bowl, place the flour, xanthan gum, cocoa powder, baking soda, salt and sugar, and whisk to combine well. Add the chocolate mixture, and mix until the dough comes together and is well-integrated.
- Put teaspoon sized blobs on the baking powder, tablespoon if you want a bigger cookie
- Place the baking sheet in the center of the preheated oven and bake, rotating once, for 7 - 10 minutes. Remove from the oven, and allow the cookies to cool completely on the baking sheet.
- Once the cookies are cool, make the glaze. Place all of the dark chocolate except for 3 to 4 1½-inch-size chunks in a medium-size, microwave-safe bowl. Microwave 30 seconds at a time, stirring in between, until melted and smooth. Add the reserved chunks of chocolate and the peppermint extract, and stir until the chocolate has begun to thicken a bit and the chunks have melted.
- Place the cookies, one at a time, in the glaze. Carefully place it on a clean sheet of baking paper. Allow the chocolate to set at room temperature (chocolate was setting fast so I basically iced the cookies)

Raw vegan snickers bars...
Nougat layer:
1/2 cup raw flour (such as oat, coconut, buckwheat, almond, etc.)
1/3 cup raw agave/maple syrup
1 cup sliced almonds
1/4 pine nuts (optional)
Caramel layer:
1 cup dates and enough water to cover them
1/4 teaspoon salt (optional)
1/2 teaspoon vanilla
2 tablespoons melted coconut oil
Raw chocolate coating:
Just use your fave recipe or my own
To make the nougat: pulse the flour, pine nuts (if using) and sweetener together in your food processor until smooth. Add the almonds by hand. Shape into small logs on parchment paper and put in the freezer.
To make the caramel: blend all ingredients together in your blender until creamy and thick, adding the least amount of water you can. spread a little on to the tops of each nougat log and put back in the freezer.
When they are frozen enough, cover each one in chocolate and let harden in the freezer or fridge.

Salted Caramel Banana Pudding...
- 1 (14-ounce) can sweetened condensed milk
- 1½ cups cold water
- 1 (3.4-ounce) package instant vanilla pudding mix
- 3 cups heavy cream
- 1 (12-ounce) box Nabisco Nilla Wafers
- 4 cups sliced ripe bananas
- 1 1/2 cups sugar
- 1/3 cup water
- 1 1/4 cups heavy cream
- 3 tsp fleur de sel
- In the bowl of a mixer, beat sweetened condensed milk and water for about a minute. Add the pudding mix and beat for about two more minutes.
- Transfer to a smaller bowl, cover, and refrigerate for at least 4 hours or overnight.
- In a large bowl on medium speed, whip the heavy cream until stiff peaks form. Using a rubber spatula, gently fold in the pudding mixture until combined.
- In a large bowl, layer wafers, bananas, and pudding. Cover tightly with plastic wrap and refrigerate for about 8 hours before serving.
- Combine the sugar and 1/3 cup water in a medium heavy-bottomed saucepan. This is the only time you can stir the sugar. If you stir it while it's cooking, it turns to rock candy. Place the saucepan over medium to low heat until the sugars start to dissolve, 5 to 10 minutes. Then turn the heat up to medium-high and cook until the sugar starts to caramelize, 5 to 7 minutes. Do not stir while this is happening. You've got to watch the pot, because it goes from caramel to burnt really quickly. And be careful, the mixture is extremely hot!
- Turn off the heat and stand back to avoid splattering. Slowly add the cream. Don't panic - the cream will bubble violently, and the caramel will solidify. Just give it more time to liquefy again-trust me!
- Simmer over low heat, stirring constantly, until the caramel dissolves and the sauce is smooth, about 2 minutes. Allow the sauce to cool to room temperature, at least 4 hours. It will thicken as it sits. Stir in salt. Recipe will make more caramel than needed for the pudding, but I'm sure you can find something to do with the leftovers!
- PLAN AHEAD when you're going to make this! Make the caramel and first part of the pudding recipe at the same time, wait 4 hrs, finish the pudding, and refrigerate overnight. The caramel does not need to be refrigerated - it thickens at room temperature.
- This caramel recipe will make much more than you need for the pudding... but you will not be upset about it. Trust me, you'll find use for it.

Play School Live in Concert - Prince of Bears 2014
We booked this for Mace's birthday weekend, and thank goodness we did, his actually birthday we were all sick, I barely got out of bed for his cake! Was overjoyed that we were all well enough to go... I have taken the kids to loads of these types of shows, some have been amazing, others less so...
Play school Prince of Bears was really inexpensive $77 for the 4 of us, for 45 minutes, cheapest we have ever been to... The most expensive was Yo Gabba Gabba at $200 for 4...
It was hosted by Alex and Rachel, neither favourites, Alex particularly annoys me! But I have to say, live, he is really charming and entertaining... It was basically all of the best nursery rhymes and dances performed within the context of the story, and Mace (3) had a blast! Marley (5) was entertained, but it was about Mace and it really ticked his boxes!
It felt fast, because it was so much fun... Would definitely recommend it if it's touring locally...

Baking vegan banana bread...
Y'all should know by now that I really enjoy baking... What you probably don't know is that I feel really guilty about baking, because my husband has a dairy intolerance and I like baking with dairy... It is a constant struggle in my mind, and then I ordered the Allergy Mama's Baking Book, and thought I would give some vegan baking a go... It went surprisingly well! I have copied the recipe with the changes I made, though I'm sure that the original would be even more delicious!!!
Banana Bread
The food allergy mamas baking book
1/2 cup glad dairy free margarine
1 1/3 raw sugar
2 large mashed ripe bananas
3tblsp water
2 3/4 cups flour I blended white and whole wheat
2 1/2 Tsp baking powder
1tblsp cinnamon
1/2 tsp salt
3/4 cup of dairy free buttermilk (1c soy milk with 1tblso white vinegar let sit for 10 mins)
Oven 175c
Beat sugar banana margarine
Mix dry ingredients
Combine all ingredients and buttermilk
Pour into 2 baking/bread pans and cook for 50-60 min until a skewer comes out clean
I stupidly put it all in one pan and so it took an hour and a half to cook!!!
It's a funny texture, but is indeed delicious... And the house smells so gooooood!

Child porn on social media...
I brought it on myself really, someone said something about a child porn account on twitter, and I stupidly clicked on it... I have always tried to not think about what an account like that contained... I assumed it was all kidnapped children being forced to do things that I'm not even comfortable thinking about... So I go to this account...
It's pictures of kids jacked from the internet! It's kids in baths (boys only on this site), young and teenage boys in their underwear, bathers/shorts, in their dress ups, in shorts with no tops on... And in this context it was seriously disturbing that people's photos that they have shared on social media with people they trust, Facebook/Instagram I assume, have been taken and put into this context... It was awful, I reported the account to twitter as having child porn, and clicked off, stressed and sick feeling, much like now, reliving the experience...
The reason I am writing this, and want you to share with your friends is that I know people that put pictures of moments with their loved ones, bath pics, pool pics, at home in hot weather and minimal clothes pics, and unless you know for 100% that every single person that you let see those pics aren't secretly into kids, it's probably best to stop posting them, unless sites like these don't bother you?
Ergh, sorry about that, but I never had a clue that these pictures could be taken so extremely out of context by repulsive individuals...
